Banana Cake

This a good snack for any time of the day. The bananas along with the nutty taste of the walnuts makes a good combination. A simple and quick recipe with a satisfying result. Have a go…

Ingredients
  • ½ cup Butter
  • 1½ cup Sugar
  • 2 Eggs
  • 2¼ cup Sifted Flour
  • ½ tsp Baking Powder
  • ¾ tsp Baking Soda
  • ½ tsp Salt
  • 1 cup mashed, ripe Bananas
  • 1 tsp Vanilla Essence
  • ¼ cup Sour Milk or Buttermilk
  • ¼ cup Walnuts, roughly chopped

    Method
    1. Heat the oven at 180°C.
    2. Cream the butter until soft; gradually adding the sugar, beating until light and creamy.
    3. Add the eggs one at a time, beating thoroughly after each addition.
    4. Sift the flour, baking powder, baking soda and salt together.
    5. Combine the mashed bananas, vanilla and buttermilk and mix well.
    6. Add the dry ingredients alternately with the banana mixture to the creamed mixture in 3 portions; beat well after each addition.
    7. Add the walnuts and lightly mix it in.
    8. Pour into a greased 12×10 inch cake pan and bake for 35-40 minutes.
