Devil’s Food Cake

A rich dark chocolate cake that melts in your mouth. Another of Kim’s mother’s delicious cakes, I though I was in heaven when I first bit into a slice of it. Definitely a keeper! The final result is a light and spongy cake with a lovely dark chocolate colour and a delicious taste that will keep you coming back for more.

Method
- Heat the oven at 160°C.
- Sift the flour, cocoa and baking soda. Keep aside.
- Blend the butter and sugar
- Add the eggs and the sifted flour alternately, mixing well after each addition.
- Add the milk and essence and blend well.
- Grease and flour a 9×6 baking tin and bake for 35-40 minutes or until a skewer through the center of the cake comes out clean.
