A good recipe if you haven’t baked your Christmas cake until the last minute. Takes just a little over an hour, and the cake is a nice blend of dried fruits and nuts that is soft on the inside and crisp on the outside.

- Set the oven at 150° C (fan forced)
- Mix the dried fruit with a little flour so that it is lightly covered with the flour.
- Beat butter well, until it is light and fluffy
- Add brown sugar and beat well.
- Add eggs and beat well.
- Sift flour, baking powder and spice powders, and add little at a time to the butter mixture. Mix well.
- Add the essences.
- Fold in the dried fruit.
- Grease and flour a 9×5-inch cake tin.
- Transfer the cake mixture to the cake and lightly bang the tin on a hard surface so that the batter settles down.
- Bake for 40-45 mins or until a toothpick inserted in the centre of the cake comes out clean.
