Fruit Cake

A good recipe if you haven’t baked your Christmas cake until the last minute. Takes just a little over an hour, and the cake is a nice blend of dried fruits and nuts that is soft on the inside and crisp on the outside.

Ingredients
  • 125 gm butter
  • ½ cup brown sugar
  • 2 eggs
  • 1 cup flour
  • 1 tsp baking powder
  • 1½ cup dried fruit / almonds
  • 1 tsp vanilla essence
  • 1 tsp brandy essence
  • ¼ tsp mixed spice powders (allspice and nutmeg)

    Method
    1. Set the oven at 150° C (fan forced)
    2. Mix the dried fruit with a little flour so that it is lightly covered with the flour.
    3. Beat butter well, until it is light and fluffy
    4. Add brown sugar and beat well.
    5. Add eggs and beat well.
    6. Sift flour, baking powder and spice powders, and add little at a time to the butter mixture. Mix well.
    7. Add the essences.
    8. Fold in the dried fruit.
    9. Grease and flour a 9×5-inch cake tin.
    10. Transfer the cake mixture to the cake and lightly bang the tin on a hard surface so that the batter settles down.
    11. Bake for 40-45 mins or until a toothpick inserted in the centre of the cake comes out clean.
