Ghee Rice is what you make when you have a special occasion or special meal. It takes very little time to prepare this tasty and aromatic blend of Basmati rice, spices, onions and dollops of ghee, along with some dried fruit. All you need is a spicy chicken or mutton curry to have a complete meal.

- Soak the rice in cold water for half an hour.
- On a medium flame, heat the ghee in a heavy-bottomed pan.
- Add the cloves, cinnamon, peppercorns and bay leaves and fry for a minute
- Add the cashewnuts and sauté until lightly browned. Add the raisins and fry til they swell up.
- Add the onions and sauté until translucent.
- Drain the water from the rice, add it to the pan and fry until the rice starts sticking to bottom.
- Add the warm water and salt and bring to a boil.
- Cover the pan and let it cook on a low flame for 10 minutes or until all the water has evaporated.
