Chicken Stew

A slightly spicy Coriander-based chicken stew.

Ingredients
  • 1 kg Chicken
  • 2 large Onions, finely chopped
  • 2 Tomatoes, finely chopped
  • 3 tbsp Oil
  • Salt to taste

    For the Stew Powder:
  • 2 heaped tsp Cumin Seeds
  • 2 heaped tsp Whole Black Pepper
  • 1 tsp Turmeric Powder
  • 4 Cloves
  • 2-inch stick Cinnamon

    Grind to a Paste:
  • 1 cup Coriander Leaves
  • 12 cloves Garlic
  • 1-inch piece Ginger
  • 5-6 Green Chillies

    Method
    1. Lightly roast and grind all the ingredients (except turmeric) for the stew powder.
    2. Heat oil in a pressure cooker and fry the onions until golden brown.
    3. Add the ground paste and fry well.
    4. Add the stew powder, tomatoes and salt and fry till the oil separates.
    5. Add the chicken and fry for about 5 minutes.
    6. Add 1 cup of water, put the lid on with the whistle and pressure cook for about 5 minutes. Open only once the pressure settles down.
      Note: If you find the curry spicy, you could add coconut milk until it suits your taste.
