Lemon Rice

This South Indian dish is quick and easy to prepare. It can also be made with leftover rice and served with Raita and Pickle to make a light and delicious meal.

Ingredients
  • 1½ cups Basmati Rice
  • 4 large Onions, finely sliced
  • 10 Green Chillies, finely sliced
  • ½ Coconut, grated
  • 2 tbsp Bengal Gram
  • 2 tbsp Urad Dal
  • 2 fresh Lemons
  • 3 tbsp Groundnuts
  • ½ tsp Mustard Seeds
  • ½ tsp Turmeric Powder
  • 4 tbsp Vegetable Oil
  • 3 sprigs Coriander Leaves, chopped
  • Salt to taste

    Method
    1. Cook the rice and keep aside to cool.
    2. Heat oil in a small skillet and add the mustard seeds. When it splutters, add the urad dal and Bengal Gram and fry until it changes colour.
    3. Add curry leaves and green chillies.
    4. Add the onions and coriander leaves and fry till onions become translucent.
    5. Add the grated coconut, turmeric powder and salt and sir well.
    6. Mix the rice with the lemon juice until every grain is coated
    7. Add the fried ingredients and mix well.

    Serve warm with plain curd or raita.
