This South Indian dish is quick and easy to prepare. It can also be made with leftover rice and served with Raita and Pickle to make a light and delicious meal.

Method
- Cook the rice and keep aside to cool.
- Heat oil in a small skillet and add the mustard seeds. When it splutters, add the urad dal and Bengal Gram and fry until it changes colour.
- Add curry leaves and green chillies.
- Add the onions and coriander leaves and fry till onions become translucent.
- Add the grated coconut, turmeric powder and salt and sir well.
- Mix the rice with the lemon juice until every grain is coated
- Add the fried ingredients and mix well.
Serve warm with plain curd or raita.
