Mangalore Buns

Mangalore Buns are delicious, spongy ‘buns’ made with overripe bananas and flour. As the name suggests, they’re a specialty of the town of Mangalore in Karnataka. The buns are generally a breakfast dish, but they’re also served as a snack with evening tea. The buns I’ve eaten in restaurants are just slightly sweet and served with sambar. However, owing to my sweet tooth, I prefer the sweeter version of it that my Mom makes. Here’s the recipe and I hope you like it as much as I do :).

Ingredients
  • 2 cups Maida or Regular flour
  • 1 overripe Banana
  • ¼ cup Buttermilk or (yogurt + water beaten together)
  • 5 tbsp Sugar
  • ¼ tsp Black Pepper
  • ¼ tsp Baking Soda
  • Salt, a pinch
  • Oil + Ghee for deep frying

    Method
    1. Peel the banana and mash it with a fork in a large vessel.
    2. Add the buttermilk and blend well.
    3. Add in the sugar, salt, pepper and baking soda. Mix together.
    4. Add the flour and keep forking it till it all comes together and forms a dough. You might have to add more flour or water depending upon the consistency of the buttermilk you are using.
      Knead for a minute or two.

    5. Apply a tbsp of oil all over the dough, cover and keep in a cool place for at least 6 hours.
    6. Heat the oil, add 2 tbsp of ghee to it.
    7. Form the dough into balls about 2 inches in diameter.
    8. Sprinkle some flour on the counter and rub some on the rolling pin. Roll the balls into discs about 3-4 inches in diameter and ¼ inch in thickness.
    9. Deep fry one at a time, on a medium heat. Gently press the discs with a slotted spoon while it is frying, so that it puffs up. Keep turning so that it doesn’t burn.
    10. Remove from the oil once the bun is puffed up and golden brown. Drain any excess oil by placing it on a paper towel.

    Serve warm.
