Rice Kheer

A rich and creamy, traditional Indian sweet made with milk and rice, garnished with nuts and raisins.

Ingredients
  • ½ cup Rice
  • 2 ltrs Milk
  • 1 cup Sugar
  • ¼ cup Raisins
  • ¼ cup Pistachios or Almonds (blanched and slivered)
  • 2 Green Cardamoms, peeled and crushed

    Method
    1. Bring the milk to a boil in a deep, heavy-bottomed pan.
    2. Add the rice to the milk and cook, stirring continuously.
    3. Once the rice is cooked and milk thickens (to a pouring custard consistency), add the sugar and mix well.
    4. Add the raisins, almonds and cardamom powder. Cook for a minute and take off the heat.
