Sheera / Kesari Bhaath

Sheera has always been one of my favorite desserts. So, when I moved out of India I realised I wouldn’t be able to drop into any restaurant and order it, I decided I should be able to make it whenever I feel like eating some :). So here’s the recipe.. enjoy!

Ingredients
  • 1 cup Semolina
  • ¼ cup Ghee
  • ¼ cup Pineapple (fresh or tinned), chopped into small pieces
  • ¼ cup Sugar
  • ¼ cup Raisins and Cashewnuts; chop nuts into small bits
  • 3 cups warm Water
  • 2 Green Cardamoms, peeled and crushed
  • 2-3 drops Yellow Food colouring

    Method
    1. Heat the ghee in a deep, heavy-bottomed pan on a medium heat
    2. Add the cashewnuts and fry until they turn golden-brown
    3. Add the raisins and the semolina and fry until the semolina turns light brown.
    4. Add the sugar and cook for about 2 minutes.
    5. Mix the food colouring with water. Slowly pour it into the pan, mixing simultaneously. This is to prevent any lumps from forming.
    6. Add the pineapple pieces and cook, stirring continuously, until the semolina is cooked and the water has been absorbed.
    7. Add the crushed cardamom and mix.

    Serve warm.
