Sheera / Kesari Bhaath

Sheera has always been one of my favorite desserts. So, when I moved out of India I realised I wouldn’t be able to drop into any restaurant and order it, I decided I should be able to make it whenever I feel like eating some :). So here’s the recipe.. enjoy!
Ingredients
Method
- Heat the ghee in a deep, heavy-bottomed pan on a medium heat
- Add the cashewnuts and fry until they turn golden-brown
- Add the raisins and the semolina and fry until the semolina turns light brown.
- Add the sugar and cook for about 2 minutes.
- Mix the food colouring with water. Slowly pour it into the pan, mixing simultaneously. This is to prevent any lumps from forming.
- Add the pineapple pieces and cook, stirring continuously, until the semolina is cooked and the water has been absorbed.
- Add the crushed cardamom and mix.
Serve warm.
