Stuffed Squid

Joshy is the one who usually cooks the squid and mussels at home, and he wanted to try something different this time. So this dish has the squid baked with a spicy filling of potato, egg and spices. It turned out quite delicious!

Serves : 2

Ingredients
  • 1 Squid tube
  • For the marinade
  • 1 tsp Chilli Powder
  • ½ tsp Turmeric Powder
  • 1 tsp Vinegar
  • Salt to taste

    For the Stuffing
  • ¼ tsp Mustard Seeds
  • 2-3 Curry Leaves
  • 4-5 Shallots, finely chopped
  • 1 Green Chilli
  • ¼ tsp Turmeric
  • ½ tsp Chilli Powder
  • ½ tsp Garam Masala
  • ½ tsp Coriander Powder
  • 1 Egg, boiled and chopped into small bits
  • 1 Potato, boiled and mashed
  • 1 tbsp Curd
  • Salt to taste

    Method
    1. Wash the squid and marinate for about half an hour with the turmeric, chilli powder, vinegar and salt.
    2. Heat the oil in a pan and add the mustard. Once it splutters, add the curry leaves and green chillies and saute for a minute.
    3. Add the shallots and fry until golden brown.
    4. Add the turmeric, chilli powder, coriander powder and garam masala and fry for a minute.
    5. Add the boiled egg, potato, curd and salt and fry for 2 minutes.
    6. Stuff the cooked mixture into the squid tube leaving about half centimetre empty on both ends.
    7. Place the stuffed squid onto a greased baking tray, spray the surface of the squid with some olive oil and place it in the oven. Cook for about 15 minutes
    8. Heat about 1 tbsp oil in a pan and fry the squid on the both sides for about 1-2 minutes each.
