Joshy is the one who usually cooks the squid and mussels at home, and he wanted to try something different this time. So this dish has the squid baked with a spicy filling of potato, egg and spices. It turned out quite delicious!

Method
- Wash the squid and marinate for about half an hour with the turmeric, chilli powder, vinegar and salt.
- Heat the oil in a pan and add the mustard. Once it splutters, add the curry leaves and green chillies and saute for a minute.
- Add the shallots and fry until golden brown.
- Add the turmeric, chilli powder, coriander powder and garam masala and fry for a minute.
- Add the boiled egg, potato, curd and salt and fry for 2 minutes.
- Stuff the cooked mixture into the squid tube leaving about half centimetre empty on both ends.
- Place the stuffed squid onto a greased baking tray, spray the surface of the squid with some olive oil and place it in the oven. Cook for about 15 minutes
- Heat about 1 tbsp oil in a pan and fry the squid on the both sides for about 1-2 minutes each.
