Upma

This is a very simple dish that’s perfect when you want to whip up a quick breakfast. Nutritious and delicious, it makes for a very satisfying breakfast.


Ingredients
  • 1 cup Semolina
  • 1 small Onion, finely chopped
  • 1 Green Chilli, deseeded and slit lengthwise
  • 2 tbsp Ghee / Vegetable Oil
  • 1 tsp Mustard Seeds
  • 1 sprig Curry Leaves
  • 2 tbsp Sugar
  • 2 tbsp Raisins
  • 2 tbsp Cashewnuts, roughly chopped
  • 3 cups warm Water
  • Salt to taste
  • 3 tbsp fresh, grated Coconut

    Upma

    Method
    1. Heat ghee in a deep pan on a medium heat.
    2. Add the mustard seeds and allow to splutter. Add the curry leaves and sauté for a few seconds.
    3. Add the green chilli and onions and fry till translucent.
    4. Add the semolina along with the salt and fry until it is lightly browned.
    5. Slowly pour in the warm water, stirring continuously to make sure no lumps are formed.
    6. Add the raisins and cashewnuts and cook until all the water is absorbed
    7. Add the coconut and cook until the upma starts leaving the sides of the pan.

    Serve hot.

      Note : If you have a sweet tooth like me, you might like to sprinkle some sugar over the upma just before you eat it. :)
