This is a very simple dish that’s perfect when you want to whip up a quick breakfast. Nutritious and delicious, it makes for a very satisfying breakfast.

- Heat ghee in a deep pan on a medium heat.
- Add the mustard seeds and allow to splutter. Add the curry leaves and sauté for a few seconds.
- Add the green chilli and onions and fry till translucent.
- Add the semolina along with the salt and fry until it is lightly browned.
- Slowly pour in the warm water, stirring continuously to make sure no lumps are formed.
- Add the raisins and cashewnuts and cook until all the water is absorbed
- Add the coconut and cook until the upma starts leaving the sides of the pan.
Serve hot.
- Note : If you have a sweet tooth like me, you might like to sprinkle some sugar over the upma just before you eat it.
