Vegetable Stew

Veg-Stew
A Kerala delicacy, this is a rich and delicious coconut stew with vegetables. It’s very mildly spiced and goes very well with Appams.

Ingredients
  • 2 Potatoes, cubed
  • 2 Carrots, cubed
  • ½ cup Beans sliced into small bite-sized pieces
  • ½ cup Green Peas
  • ½ Onion or 4-5 Shallots
  • 3 Green Chillies, halved and deseeded
  • 1 small Tomato, sliced
  • 5-6 Curry Leaves
  • ¼ tsp Turmeric Powder
  • ½ Bay leaves, tear into small pieces
  • 1 cup Coconut milk
  • ½ tsp Cumin seeds
  • 2 Cardamom seeds
  • 1 piece Cinnamon
  • 4-5 Cloves
  • 3-4 whole black pepper
  • ½ tsp Vinegar
  • Salt to taste
  • All purpose flour - 1 tbsp

    Method
    1. Lightly roast the cumin, cinnamon, cloves and whole black pepper; grind them along with the cardamom.
    2. Saute potatoes for a while and remove when the color starts to change. Repeat the procedure with each vegetable.
    3. Keep them aside.
    4. Add all masalas and onion. Saute for sometime. Do not brown the onions.
    5. Add all purpose flour and stir until the raw smell goes away.
    6. Add the turmeric powder, curry leaves, bay leaf, green chillies and all the vegetables.
    7. Pour thin coconut milk (mix half coconut milk with 1 cup of water) into the pan and cook the vegetables till done on a medium heat.
    8. Add salt and vinegar.
    9. Add thick coconut milk and stir well; cook on a low flame for 3 mins.

    Serve hot with Appams.
