Vegetable Upma

This is a very simple dish that’s perfect when you want to whip up a quick breakfast. It’s a good way to use up any veggies in your refrigerator that need to be used up. Nutritious and delicious, it makes for a very satisfying breakfast.

Ingredients
  • 1 cup Semolina
  • 1 cup mixed vegetable, chopped into small bits (potato, carrots, beans)
  • 1 Onion, finely chopped
  • 1 small Tomato, chopped
  • 1 Green Chilli, finely sliced
  • 2 tbsp Ghee / Vegetable Oil
  • 1 tsp Mustard Seeds
  • 1 sprig Curry Leaves
  • ½ tsp Turmeric Powder
  • 3 cups warm Water
  • Salt to taste

    Method
    1. Heat ghee in a deep pan on a medium heat.
    2. Add the mustard seeds and allow to splutter. Add the curry leaves and green chilli and sauté for a few seconds.
    3. Add the onions and fry till translucent. Add the turmeric powder.
    4. Add the vegetables and fry till tender. The potatoes and carrots should be cooked.
    5. Add the tomatoes and sauté for half a minute.
    6. Add the semolina along with the salt and fry until it is lightly browned.
    7. Slowly pour in the warm water stirring continuously. Make sue no lumps are formed.
    8. Cook until all the water is absorbed and the upma starts leaving the sides of the pan.

    Serve hot with pickle.
