Vegetable Upma

This is a very simple dish that’s perfect when you want to whip up a quick breakfast. It’s a good way to use up any veggies in your refrigerator that need to be used up. Nutritious and delicious, it makes for a very satisfying breakfast.
Ingredients
Method
- Heat ghee in a deep pan on a medium heat.
- Add the mustard seeds and allow to splutter. Add the curry leaves and green chilli and sauté for a few seconds.
- Add the onions and fry till translucent. Add the turmeric powder.
- Add the vegetables and fry till tender. The potatoes and carrots should be cooked.
- Add the tomatoes and sauté for half a minute.
- Add the semolina along with the salt and fry until it is lightly browned.
- Slowly pour in the warm water stirring continuously. Make sue no lumps are formed.
- Cook until all the water is absorbed and the upma starts leaving the sides of the pan.
Serve hot with pickle.
